Baked Chicken Zucchini Meatballs

Try out these delicious Baked Chicken Zucchini Meatballs thanks to 'The Iron You' -


  • 1 lb ground organic chicken
  • 1 large (or 2 small) zucchini, grated
  • 1 medium onion, finely chopped
  • 2 egg whites (or 1 large egg)
  • 2 tablespoons mint, finely chopped
  • 2 tablespoons parsley, chopped
  • 1 teaspoon fine grain sea salt
  • œ teaspoon cayenne pepper
  • œ teaspoon black pepper
  • 1 teaspoon turmeric (optional)


  • Preheat oven to 200°C
  • Line a baking sheet with baking paper.
  • In a large bowl, combine all the ingredients and mix very well (using your hands will deliver better results).
  • Scoop one tablespoon of the mixture, shape into meatballs and arrange on the baking sheet.
  • Brush a little macadamia oil on top of the meatballs.
  • Place the baking sheet in the oven until meatballs are just cooked through, about 20 minutes (you can brown the top carefully under a grill for one more minute if you like).
  • Serve warm with your favorite sauce.

I like to serve these with a very basic tomato, onion, garlic and basil sauce or even a salsa to dip them in if your just eating them as a snack.
*Adjust the mint and parsley to suit your taste as you make them as I sometimes like a little less mint and parsely, but it's a personal preference.
