Paleo Honey Garlic Chicken.
This quick and easy recipe can be cooked in the slow cooker or if you are in a hurry and a little time poor like me then do yourself a favour and give a pressure cooker a whirl....it's a game changer :)
The whole family will love this Honey Garlic Chicken. Once cooked served with steamed rice and veggies. This recipes make plenty for a large family or great for weekend meal preps and lunches for the week.
1.5kg Chicken Thighs (boneless)
1/2 cup Coconut Aminos
1/2 Cup Honey
1/4 Cup Hoisin Sauce - Check out our recipe for home made hoi sin sauce here
2 Tbls Coconit Cider Vinegar
2 tsp fresh ginger minced
1/4 tsp chilli flakes
5 cloves of garlic crushed (I used crushed garlic from the jar - 5 tsp)
1 Onion diced
3 Tbls Arrowroot (Tapioca) Flour

Combine: Coconut Aminos, Honey, Hoisin Sauce, Coconut Vinegar, Garlic, Ginger, Onion and Chili
Place chicken in Slow Cooker or Pressure Cooker, pour sauce over the top.
In Pressure Cooker cook for 30min, If using slow cooker cook on low for 5 hours.
Remove chicken, shred and set aside.
Combine 3 Tblsp of Water and Tapioca. Mix tapioca liquid into liquid remaining in slow cooker or pressure cooker and stir until sauce has thickened.
The Pressure Cooker
Don't be scared of the Pressure cooker it really is a game changer. While it can seem a daunting at first it is just a matter of experimenting with your slow cooker recipes to test them out in the pressure cooker until you get your desired result.
This Honey Garlic Chicken will take approx 5 hours in the slow cooker but only 30 minutes in the pressure cooker.
Most red meats I have cooked in the pressure cooker usually go from taking 6-8 hours in the slow cooker to 1 hour in the Pressure Cooker....yasss
