Chocolate Cake

Gluten Free, Nut Free

Looking for a Guten Free treat for the kids lunch boxes that doesn't use the usual nut meals and flours? Look no further than this amazing Chocolate Cake from 'The Artisan Mill' using their Australian Grown Pumpkin Seed meal, and tastes amazing.


  • 6 Egg Whites
  • 75gm Castor Sugar *
  • 300gm Dark Chocolate*
  • 250gm Butter
  • 6 Egg Yolks
  • 120g Pumpkin Seed Meal
  • 170gm Brown Sugar*

How to make it

  1. Prepare a cake tin and preheat oven to 150deg
  2. Melt Chocolate and butter then let cool to a warm temperature
  3. Stir egg yolks into cooled chocolate butter mix.
  4. Fold through Brown Sugar, and Pumpkin Meal.
  5. Whisk Egg whites with 75gm Caster Sugar until soft peaks form
  6. Fold egg whites into chocolate mix
  7. Por batter into cake pan. Bake at 150deg for approx 120min. 
  8. Test with a skewer, continue to cook if skewer doesn't come out clean.
  9. Cool cake for 10 minutes in pan

*We used Lindt 80% dark chocolate but a low sugar dark chocolate could be used or make your own using, cacao butter, cacao and agave.

*Brown Sugar could be substituted for Coconut Sugar or Experiment with Low Carb Erythritol for the egg white component or alteratives

All that is left is to eat and moderation of course ;)
