Paleo Butter Chicken

I have always loved Butter Chicken and tried so many Paleo versions and most are a major dissapointment. IMO!
This next recipe however is a never fail butter chicken recipe and tastes amazing!!
Dish this up to your Paleo sceptical friends, they won't even realise they are eating the Paleo (clean) version....well if it can trick my kids and they still think they are eating the jar version then I am onto a winner!

This recipe was inspired by the original from the Merry Maker Sisters with a few minor tweaks (to make sure the kids would eat it lol)

Whats in it?

  • 1kg Chicken thighs (roughly cubed)
  • 2Tblsp Coconut Oil
  • 1 Brown Onion
  • 2Tblsp Grated Ginger
  • 1 Clove of Garlic (crushed)
  • 3 Tbls Coriander Seeds
  • 3 Tsp Cumin
  • 1/2 tsp Nutmeg
  • 1/2 tsp Cinnamon
  • 1/4 tsp Chilli powder
  • 1/4 tsp Paprika
  • 1 Red Capsicum (diced)
  • 4 Tblsp Tomato paste
  • 1 Can crushed tomatoes (make sure to get the zero added sugar variety)
  • 400ml Coconut Milk
  • 2 Cups Spinach (roughly chopped)

How do I make it?

  1. Heat half the oil in a pan
  2. Cook Chicken in batches until brown. Remove from pan.
  3. Saute Onion, garlic and Ginger
  4. Add all spices and cook for 2min
  5. Add tomato paste
  6. Add diced capsicum
  7. Add Crushed Tomatoes (stir)
  8. Add Coconut Milk (stir)
  9. Return chicken to pan and simmer for 10min then add spinach
  10. Serve with Cauliflower rice and vegetables
