Peppermint Cream Protein Bar

I know what everyone really wants is my Salted Caramel Protein Bar recipe but I'm not quite ready to give that secret up juuusst yet.....however another popular Protein Bar I make is also my Peppermint Cream Protein Bars.

If you have a bit of a sweet tooth these tasty snacks are a healthy alternative to the refined sugar laden, processed variety in the supermarket, but if you are watching your wasteline I do have to recommend you restrict these to a once a week treat....if you can ;)

THE TOP - Perppermint Cream

 
What's in it?

  • 1/3 Cup Maple Syrup
  • 2 tsp Coconut Flour
  • 3 tsp Peppermint Extract (reduce if that's a bit minty for you)
  • 2 Tblsp Coconut Butter (I like to make my own in the Vitamix however you can purchase this from a healthfood shop)
  • 1/2 Cup Coconut Oil

 
How do I make it?

  • Combine everything in a bowl except the Coconut Oil
  • Whisk together until there are no lumps
  • Gradually add the Coconut Oil
  • Sit mixture to one side (It will appear brown in colour - but not for long)

  
THE BASE

What's in it?

  • 1 Cup Almond Meal
  • 3/4 Cup Coconut Flour
  • 2 30gm Scoops 'True' Protein Powder
  • 1Tblsp Raw Cacao
  • 3 Tblsp Honey
  • 1/3 Cup Coconut Oil
  • 1/4 Cup Peppermint Cream mix

 
How do I make it? 

  • Combine Almond Meal, Coconut Flour and Protein Powder
  • Add 1/4 cup of Peppermint Cream mixture and stir
  • Add 1/3 cup Coconut Oil and stir
  • Add 3 Tblsp Honey and combine all ingredients until they are slightly crumble but can be pressed firmly into a ball

 
I form this mixture into 53gm portions and press into bar shaped silicone mould so they are easy to get out again but you could probably use a slice tray or a cupcake mould.

THE CHOCOLATE

What's in it?

  • 200gm Cacao Butter
  • 90gm Raw Cacao
  • 5Tblsp Agave

 
How do I make it?

  • Melt Cacao butter in a small saucepan, stir occassionaly, do not allow to boil
  • Remove from heat but don't allow to cool
  • Add Cacao powder and whisk together
  • Add Agave and whisk together.

*I then pour this mixture into moulds and freeze it so that I can re-melt again whenever I need it


PUT IT ALL TOGETHER

  • Press the base into the individual moulds
  • Put a heaped teaspoon full of Peppermint Cream mixture onto each bar.
  • Place in freezer for 30min to 1hr
  • Peppermint Cream will turn white 
  • Remove from moulds
  • Melt some of your chocolate that you made earlier in a small bowl, add 1tsp Peppermint Extract
  • Line a plate or tray with baking paper
  • Dip each bar into the chocolate, coating all sides.
  • Place on Baking paper
  • Once all bars are coated, return to the fridge to set

 The bars won't stick to the paper once the chcolate has set.
 
Sounds like a lot of steps but the are really yummy and have plenty of protein.
