Paleo Zucchini Muffins
I always loved when my Nana made Zucchini Slice. Sadly as much as I love it, it probably didn't love me with the high amount of Vegetable oil, Flour and cheese that was in it.
So we made a few tweaks to make a healthier version of this classic. Perfect for Breakfast, Lunch, Dinner or just as a snack.
What's in it?
1- 2 Large Zucchinis grated
1/4 cup coconut oil
1 Cup Almond Meal
1 tsp baking powder
4 Free Range Range Eggs
Handful of Spinach
1 Carrot Grated
4 Rashers of Bacon
How to make it.
Dice Onion and Bacon, cook in frypan until onion is transparent, remove from heat
Grate Zucchini, squeeze out as much water as you can
Add Almond Meal, Melted Coconut Oil and Eggs, stir together
Add shredded baby spinach and grated carrot and stir
Stir in Bacon and Onion mix
Add Salt and Pepper. Our secret ingredient is Himilayan Salt with Dulse Seaweed flakes mixed in. Enhance the natural Iodine content and enhance the flavour ...yum
Spoon into a silicon muffin tray (spray with coconut or olive oil)
Bake for 25 min
Enjoy warm with a salad or Cold for lunch :)
*You can add whatever other veggies you like to these. You can also add a small amount of fresh grated parmesan chees if you like :)
